Walnut Yoghurt Cupcake

Baked this two Saturday ago. The house modem spoilt and I won’t be able to log into internet. It is so damn boring and nearly die off from boringness. SMSed Irene that I really will die without the internet connection at home. She SMSed me back saying that I am sure I can find dig something out to do. Hahaha… ya, finally I baked a batch of Walnut Yoghurt Cupcakes for the kids. Drove the kids out to 7-Eleven to buy a pack of natural yoghurt to bake this cupcakes. This is the second time I baked this cupcakes.The actual recipe is named Strawberry Yoghurt Cupcakes but I substitute with other ingredients like mango or walnuts. The kids had this for tea-time and Le-Ann loves it.

Ingredients :
150gm Naturel Soft Margarine
200gm plain flour
2 tsps baking powder
1 tsp bicarbonate soda
150gm castor sugar
100ml plain yoghurt
1 tsp vanilla essence
2 eggs, lightly beaten
60gm walnuts, chopped
Extra walnuts, to garnish

Method:
1. Preheat oven to 170DC. Meanwhile, sift flour, baking powder and bicarbonate soda into a mixing bowl. Add sugar and mix well.
2. Using a pastry blender, combine Naturel Soft Margarine with the flour mixture until well mixed. Stir in yoghurt, vanilla essence, egg, walnuts to form a batter.
3. Place paper cups on a tray. Spoon batter into the paper cups by filling each paper cup about 2/3 only. Garnish with extra whole walnuts.
4. Bake for 20 minutes in the pre-heated oven.
